Peach Almond Muffins...

I am starting this post early, before kids are awake, so hoping I can finish before Josey wakes up Gracie. He does that. Alot. He is talking in his crib now. She is still sacked out. I love my video monitor!

While in college I worked for the Bradford Inn, a family run bed & breakfast in Branson MO. Theme rooms, great people & TONS of yumminess for breakfast, including their Peach Almond Muffins. 

Since I have many peaches sitting on my dryer waiting to be cleaned, I made some peach almond muffins for breakfast yesterday. Can't wait to have one this morning. The kids love sweet breads, so I am sure they will enjoy them today. If they are in the mood...

Peach Almond Muffins from Bradford Inn, Branson, MO

Topping: 
1/2 c sugar
2 tsp cinnamon
Mix together in small bowl. You will have leftovers. I put mine in a jar for the next round of muffins.

Batter: 
2 1/4 c flour
1 1/2 c sugar
3/4 tsp baking soda
3/4 tsp salt
3/4 c almonds, sliced 
3/4 to 1 c peaches, diced, fresh or frozen, not canned
3/4 c oil
 3 eggs
1/2 tsp almond extract
2 TB vanilla

Heat oven to 340 degrees (yep 340). Spray your muffin pan w/ non stick spray. In med bowl, stir together flour, sugar, soda, & salt. I used sliced almonds so break those up in your hands before tossing in the bowl. Stir.

Dice peaches into small pieces. Stir these into dry ingredients. This helps them from lumping up on the bottom of your muffin.

Make a well at the side of the bowl. Add eggs, beat slightly, then add oil, vanilla & almond extracts. Stir till these blend into themselves, then start blending in w/ dry ingredients. Don't overmix. 

Spoon into muffin pan, filling 1/2 full. Sprinkle muffins w/ 1 tsp topping mixture. 
Bake 15-20 min till done. 

Yes, I need to take more pics to post, but alas, my phone camera has died. I need to fix that before we go on vacation next week! YIKES~

Oh I am so making these while on vacation! Not sure if I have muffin tins there but I know I have a baking pan or loaf pan that will work
